Domaine Camille & Guillaume Boillot

Few family names carry more weight in the Côte de Beaune than Boillot, and with Camille & Guillaume Boillot a new branch has begun. Guillaume is the son of Henri Boillot. He worked at his father’s domaine from 2011, where he was responsible for the vineyards and the red wines. Camille is the fifth generation of her own wine-growing family. Her father, Christophe Violot-Guillemard, has his estate in Pommard. Their domaine brings those two families together, and they run it with the next generation, their four children, in mind.

Their first vintage was 2022. It came to about 12,000 bottles, and they expected roughly double that for 2023. They make the wines in their own cellar in Meursault. Guillaume has said that around 40,000 bottles would be a good, sustainable size, which is still a small operation by Burgundy standards. Many cuvées are made in tiny amounts, some in a single barrel.

The domaine started with just two plots. One is La Corvée aux Moines, a Bourgogne Blanc vineyard below Puligny-Montrachet. The other is Puligny-Montrachet Les Enseignières, from vines planted in 1946 just below the Grand Cru Bienvenues-Bâtard-Montrachet. They also lease plots in Meursault, including Le Limozin and the Premier Cru Les Charmes. The rest of the range comes from a small négoce of grapes bought from friends, which the couple harvest themselves. Camille sums up their approach in three words: “make beautiful with raw.”

In the cellar they use little or no new oak. The Bourgogne wines are made without new wood, and they lean on larger barrels of 350 to 500 liters alongside the traditional 228-liter size. Guillaume describes the style they are after as “a light toast and a small reduction but still with concentration and with fine length.” The result is precise, saline white Burgundy. Burgundy Report, tasting the first vintage, found the Meursault Les Charmes “mineral, complex, saline” and the Enseignières “direct and saline.”

We are proud to bring nine of their 2024 wines to the United States, from the Bourgogne Blanc and Bourgogne Côte d’Or Rouge through Saint-Romain and village Meursault and Puligny to Premier Crus in Meursault, Chassagne-Montrachet and Puligny-Montrachet. Quantities are very small. This is a young domaine with deep roots, already making its own mark.
